They’re not letting any cilantro growing under their feet at Cantina Laredo (4635 PGA Blvd., 561/622-1223). The upscale Mexican eatery in Palm Beach Gardens is rolling out new dishes and dinners faster than you can say, “Ole!”

There’s a new bar menu, available later this month, featuring goodies like steak and cherry salsa flatbread and chicken empanadas. There’s a whole line of new Mexico City-style tacos, from fajita (skirt steak) and carnitas (slow-roasted pork) to pollo cascabel (spicy sauteed chicken) and pescado (mahi).

There’s a special menu offered until this Thursday (Sept. 20) to celebrate Mexico’s independence from Spain. The $19.99 prix fixe menu includes dishes like chicken and hominy soup, quail and chicken fajitas, churros with chocolate-raspberry dipping sauce, even a special cocktail—the El Grito Margarita ($5)—that layers a frozen ‘rita with pomegranate puree and Midori melon liqueur.

And, finally, also on Sept. 20 is Cantina’s quarterly Tequila Dinner, featuring four courses and Patron tequila. Served up will be a shrimp cocktail shooter, watermelon-jicama salad, cochinita pibil or shrimp in sun-dried tomato-chipotle sauce, and berries and cream for dessert. Cost is $49.99 per person and festivities get underway at 7 p.m.
