It’s a well-known fact that breakfast is the most important meal of day. Think of it as fueling up your vehicle before a long ride – to get the most out of your trip, you need to get the best fuel. Here are my top ideas for vegans and vegetarians that will help you boost your energy and supercharge your day.
Because raw, unprocessed foods have the most vitamins, enzymes and nutrients to propel you, I recommend experimenting with an energizing green smoothie. It features blood-purifying kale, high protein hemp seeds and energy boosting fruit and berries.
Here is a simple recipe that will keep you going for hours. Z-Tip: make two servings and keep the second one for your afternoon snack!
2 leaves of kale
1 cup frozen organic strawberries
1-2 tablespoons of hemp protein or RAW protein
1 cup sweetened vanilla almond milk
1/2 teaspoon organic chlorella
1/2 cup Water
Blend all the ingredients in a blender and enjoy.
If you are craving something warm, but don’t want to settle for the old-fashioned oatmeal, then try my twist on this healthy favorite. One of my secret ingredients is oat bran, which contains more protein and fiber than oats. To make the oatmeal creamy, use cholesterol-free almond milk that is richer in flavor than regular milk and has fewer calories.
1/3 cup rolled oats
1/3 cup oat bran
1/3 cup sweetened vanilla almond milk
½ cup water
Dash of salt
Dash of stevia
Cook the oatmeal and oat bran with water and almond milk. Add the remaining ingredients to taste.
A TWIST ON SCRAMBLED EGGS – VEGAN STYLE
For those who are craving an egg burrito, but want to skip the animal protein and cholesterol, try vegan scrambled “eggs”. Because the main ingredients here is tofu, this dish is lower in calories than eggs and full of filling protein and fiber.
18 oz of extra-firm organic, non-GMO tofu
2 tablespoons olive oil
1 small onion, chopped
1 small green bell pepper, finely chopped
1 small red bell pepper, finely chopped
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1 1/2 teaspoons ground turmeric
1/2-1 teaspoon black Indian salt is best - it has an egg flavor. You can buy it online.
6 gluten-free rice tortillas
1 chopped avocado
3 chopped tomatoes
Absorb the liquid from tofu with a paper tower. Chop up in small pieces.
Heat a skillet and cook onions until soft.
Add tofu and peppers. Add spices last. Cook until well heated through.
Serve inside a tortilla shell with avocado and tomato slices.
