They’ve been busy, busy, busy at Mozart Café (7300 W. Camino Real, 561/367-3412), the contemporary upscale Kosher dairy eatery in Boca’s Fountains Center. There’s a new kitchen crew, new menu and redesigned dining room, all “a complete departure from the old Mozart Café,” according to managing partner Mike Zikri. The reworked menu features such additions as avocado eggrolls with cilantro dipping sauce, gnocchi marsala with roasted wild mushrooms, four-cheese pizza, plus new sandwiches, salads and a kids menu. If you’re a fan of Mozart’s Sunday buffet brunch, don’t worry. It’s not going anywhere.

Busy too at Café Boulud (301 Australian Ave., 561/655-6060), Daniel Boulud’s superlative establishment in the Brazilian Court hotel in Palm Beach. Boulud protégé Rick Mace recently replaced departed exec chef Jim Leiken, and now comes word that a replacement for executive pastry chef Arnaud Chavigny has been appointed. He’s Eric Snow, a native of (brrr…) Alaska, who’s previously worked a diverse number of high-end restaurants, from Alain Ducasse miX in Las Vegas to the Greenbrier Resort in West Virginia. Just shows to go ya, nothing ever stays the same in the restaurant biz.
