With three decades of running seafood restaurants behind him, John Stilley certainly has the pedigree to go with his latest endeavor, the fish-friendly Wave 2700 (2700 N. Federal Hwy., 561/361-2700) in Boca Raton.
The owner of Snappers in Boynton Beach and former manager of Boca’s iconic Seafood Restaurant, Stilley paired his seafaring expertise with a passion for fine wine at Wave, which puts an affordable spin on two of the most expensive items on South Florida restaurant menus. We’re talking appetizers mostly under $10 and entrees, with the exception of such pricy delicacies as crab and lobster, mostly under $20.
On your plate that means starters like oysters Rockefeller, spicy shrimp on blue cheese slaw and jumbo lump crab-stuffed mushrooms; pastas like seafood jambalaya and mixed seafood risotto; and entrees that range from fish -n- chips and snapper Veracruzana to steamed Alaskan snow crab and seafood-stuffed lobster tails.
The wine list is a blessing in its thoughtful selection and startlingly fair pricing, with a half-dozen varietals from Duckhorn’s Decoy label priced at $10 by the glass and $36 by the bottle, as well as such relative rarities as Caymus- unoaked Chardonnay and Kenwood’s “Jack London” Cabernet Sauvignon.
As for the restaurant itself, it’s open for lunch and dinner daily, and features indoor and (covered) outdoor dining, a lounge and wine bar, fireplace and communal table.
