One thing you have to say about Carmine Giardini: he’s not one to let any arugula grow under his feet. In fact, just keeping track of the projects he’s got pending is enough to send most of us to bed for a nice long nap.

Here’s the list. . .

-Coming in December is Umi Fish Bar and Grill, which takes over the old Noche niteclub space in Palm Beach Gardens. Giardini’s partner in the eatery is John Belleme, late of Henry’s in Delray, who plans a menu of tapas-style small plates, more traditional entrees, sushi and items from a raw bar and robata grill. There will be an indoor-outdoor waterfront bar too.

-Early next year should see the debuts of three more CG Burgers restaurants, on PGA Boulevard (where Bice Bistro used to be), and in West Kendall and Coral Springs. And those are just a prelude to taking the gourmet patty purveyor nationwide.

-West Kendall will also be the site of another Carmine’s Trattoria, the casual Italian eatery at the back of the spectacularly well-endowed Carmine’s Gourmet Market.

-And in Coral Gables way-tony Village of Merrick Park, look for both a CG Burgers/Coal-Fired Pizza eatery, plus a second incarnation of Giardini’s wildly popular Cabo Flats Mexican eatery, which borrows liberally from the Chicano culture of Los Angeles.
