JARANA Aventura continues its Chef Collaboration Series with a one-night (Friday, July 18) culinary event featuring Diego Oka, executive chef of La Mar Miami and a prominent figure in modern Peruvian cuisine. Known for blending Japanese techniques with Peruvian tradition, Oka brings more than a decade of experience to this exclusive dinner alongside JARANA’s executive chef, Martha Palacios.
Together, the chefs will present a limited-edition, $70-per-person menu served family style, celebrating coastal Peruvian flavors with creative twists. Part of JARANA’s monthly series spotlighting leading and emerging Peruvian chefs, the event offers a unique culinary exchange rooted in culture, innovation, and bold taste.
The menu begins with Conchitas Oka — 24-month aged Parmesan, truffles and crispy garlic — followed by two appetizers: King Crab Causa with smoked trout eggs, Jerusalem artichokes, and huancaína sauce; and Tiradito Lujoso with Japanese Hamachi, uni and roasted rocoto leche de tigre. The main course is Sopa Seca de Mariscos, a soulful seafood linguini slow cooked in the Josper. For dessert, guests will enjoy Chicha Mascarpone — a mascarpone mousse with meringues, chicha morada and strawberries.
