Big changes in store for the premier restaurant at the tony Four Seasons Palm Beach.

What was called, fittingly enough, as The Restaurant will in early December—just in time for the Palm Beach Food & Wine Festival—become an as-yet unnamed eatery offering “a modern take on fresh Italian” cuisine, according to spokeswoman Laurie Zuckerman.

The restaurant formerly known as The Restaurant has been closed for awhile for renovations, which include a more contemporary design as well as the concept and menu. Resort executive chef Daryl Moiles will oversee the kitchen of the new restaurant, which should have a name in the next couple of weeks, but a chef de cuisine will likely be brought in to run things on a day-to-day basis.

A menu too should be forthcoming in a couple of weeks, but Moiles is looking to double down on the local/seasonal ethos, pairing local food products and seafood with artisanal foods brought in from all over the U.S. and Italy. The new eatery’s bar will also jump on the upscale artisanal bandwagon, with a modern mixological bent and focus on premium spirits and liqueurs.
