The “do it yourself” menu is beginning to catch on with upscale restaurants. Pizzas, salads, burgers and pastas have all been made more diner-friendly by giving customers a choice of toppings-garnishes-proteins-sauces. Now Wild Olives (5050 Town Center Circle, 561/544-8000) is applying that “pick one from column A, one from column B” concept to its lunchtime sammies.

Actually, Todd English’s Boca Raton eatery offers choices from columns A, B, C, D and E. It starts with a choice of meats, from Black Forest ham to braised lamb with roasted red peppers, then moves on to five different types of bread, a quintet of cheeses (from American to Maytag blue), four garnishes and dressings from good ol’ mayo and Dijon mustard to cranberry aioli and Thousand Island.

There’s one more choice to make too, whether you want fries, rosemary potato chips of cole slaw with your sandwich, which will set you back from $13 to $15. Also added are a couple of new salads – Asian chicken and Cobb – in case you want to eat a little greenery while parting with some greenery doing your last-minute holiday shopping.
