It took a few extra days to work the kinks out but Rick Simek and Mary Cheatham have their Curbside Gourmet food truck up and running and on the road in West Palm Beach.
Last Thursday the former private chef-movie/TV caterer and culinary school grad parked their customized pastel green-and-vivid red truck on North Federal Highway at Southern Boulevard for their first day of turning out inexpensive street food based on fresh, local ingredients for hungry local foodies.
The $100,000 truck boasts a complete, if scarily minuscule, kitchen, right down to griddle, twin deep-fryers, refrigerator and A/C. I had the chance to sample some of the duo’s fare, including juicy, all-natural Black Angus burgers with heirloom tomatoes and Swank Farms greens, succulent little crabcake sliders with lemon-tarragon aioli and a mojo-marinated pork taco with fat chunks of pig, pico de gallo and avocado on home-made tortillas. And nothing on that list costs more than $7.
For the foreseeable future, Simek and Cheatham will keep the truck rolling only in West Palm, at various locations on North Fed and Flagler Drive, serving breakfast, lunch and afternoon snacks.
