If you’re not partaking in dry January, then listen up. Warren Delray is hosting a luxury wine dinner on Monday, Jan. 16. The exclusive dinner invites guests to dine on a five-course meal, each dish paired with French and American wines. Peruse the menu below and if you’re interested, don’t wait too long to make a reservation as the evening is only open to 16 guests. Tickets are $250/person.

First course

Hamachi, caviar, Marcona almond romesco, brown butter creme fraiche, fennel fronds, citrus oil and Maldon salt 

Pairing: Piper Heidsieck “Rare” 2008 Brut, Champagne

Second course

Chanterelle mushroom, puff pastry, humbolt fog and meyer lemon purée 

Pairing: Château de Meursault, Burgundy, Chardonnay 2018 

Third course

Sous vide pork loin layered with butternut squash, garlic confit, and Swiss chard, brûléed plums, hazelnut apple and frisée salad, Saba

Pairing: Kosta Browne, Russian River Valley, Pinot Noir 2019

Fourth course

Lamb osso buco, blue corn grits, grilled celeriac, Aperol and blueberry gastrique

Pairing: Kathryn Hall, Napa Valley, Cabernet Sauvignon 2017 alongside Sinegal, Napa Valley, Reserve Cabernet Sauvignon 2017  

Fifth course

Wild berry streusel with a honey yogurt ice cream 

Pairing: Merryvale Antiqua, St. Helena, Muscat de Frontignan
